Preheat oven to 180°C.
Saute:
- 40g unsalted butter
- 200g sliced brown mushrooms
- 1 cup baby spinach
- 2 garlic cloves, finely minced
- ½ tsp thyme leaves

Stuff the chicken generously with the mixture, add lots of
pieces of The Laughing Cow cheese triangles.
- Bake for 20-25 minutes, serve with green veg.
- Serve to someone you want to impress!
