Paper-thin sheets of pastry encase the surprise hidden inside these parcel delights! Layers of smoked salmon and leek are smothered in creamy The Laughing Cow® cheese. The perfect
addition to any meal, or enjoyed all on its own!
- 8 sheets of filo pastry
- 300g leeks
- 1 onion
- 8 slices of smoked salmon
- 6 portions of The Laughing Cow®
- 1 knob of butter
- 2 tablespoons oil or melted buttern
PreparationWash and slice the leeks. Peel and finely cut the onion. Divide into 4 the portions, The Laughing Cow® cheese, and the slices of smoked salmon. Melt the butter in a frying-pan and cook – gently – the vegetables. Season with salt and pepper. Remove from heat and add the portions of The Laughing Cow® and mix well. On a work surface place two sheets of filo pastry. Arrange a few slices of smoked salmon on each sheet. Spread the leek mixture on top and finish with more slices of smoked salmon. Close the sheets of filo pastry with a piece of string or a toothpick to make little parcels. Brush with olive oil. Bake in a pre-heated oven to 180°C for 15 minutes. Serve while hot and the parcels should be golden brown.
