This tempting snack puts a twist on the classic Italian bruschetta. Gently caramelised tomatoes, and golden sourdough are fused with smooth The Laughing Cow® Light cheese to put a skip in your step!
- 8 cherry tomatoes on the vine
- Salt and pepper
- 2 slices of sourdough bread
- 2 triangles of The Laughing Cow® Light
- Few basil leaves
- 1 tablespoon pumpkin seeds
PreparationPre-heat the oven to 200 degrees. Place the tomatoes, vine attached, on an oven tray and season with a dash of salt and pepper. Place in the oven for 12-15 minutes until the skin splits and the tomatoes are softened. Heat a griddle pan on a high heat and slightly char the bread on both sides (alternatively you could use a toaster). Spread each toast with a triangle of The Laughing Cow® Light and place 4 tomatoes on each slice. Sprinkle with basil and pumpkin seeds and serve.
